OK, it’s not Friday, but we can’t help but be excited for National Rum Day. While nobody seems to know when the day actually came into being or who started the whole thing, we really don’t mind having an excuse to cozy up with our sugarcane-derived friend. And while we enjoy the last few weeks of summer, we have to celebrate with a summertime classic, the piña colada.
3 oz. light rum
3 tbsp. coconut cream
3 tbsp. crushed pineapples
Put all ingredients into an electric blender with two cups of crushed ice. Blend at a high speed for a short length of time. Strain into a glass and serve with a straw. Then, pop in Rupert Holmes’ “Escape.”
